UPAS
A Hokkaido brewery set inside a 3.6-hectare old-growth forest, naming its sparkling sake in the Ainu language.
Morino Brewery stands amid 3.6 hectares of 50-to-60-year-old forest in Rankoshi, Hokkaido, built on a philosophy of coexisting with nature. It makes sparkling sake shaped by rice, rice koji, and the brewer's own thinking and technique, releasing it under names drawn from the Ainu language — among them UPAS, APE, ATUY and NITAY.
